Yesterday I promised you a good comfort food recipe, so here we go. I learned this from my Grandma, it is a super quick veggie soup that will warm you up on cold winter days and you don’t need many ingredients.
What you will need:
Vegetable stock cubes
Carrots
White carrots (only a thing in Eastern Europe)/parsnips
Potatoes
Peas (frozen/canned/fresh)
Onion
Thin noodles
Optional:
Celeriac
Basically any good root veg
Tomato
Yellow Hungarian pepper
Chili
Parsley
Basically at this point, there is barely any explaining to do. Take a big pot, put in some water, say 2 liters, pop in 2-5 stock cubes (depending on strength, check the box), peel and cut all your veg, throw them into the pot, bring to boil and simmer for about 20 minutes. Once the veg is more or less cooked, throw in the noodles and cook as long as the noodle pack specifies. Ta-daaa! You are all done, just pop it into a bowl, maybe top it with some fresh parsley or some chili if you are in the mood for it, and it’s ready to be eaten.
Day 6
Well damn, it’s properly cold now! We slept in after yesterday’s long Skype session and weren’t in the mood to face the chilly weather, but eventually we decided to head out on a nice long walk down to the lake. It was cloudy, cold and I didn’t take my camera, so no pictures of that… Once we got back, it even started to snow, although it didn’t really stick, just melting away right after touching the ground.
That definitely meant a pause on the outdoor projects and time to focus on spending time inside… Which basically led to a huge series binge-watching session, starting off with 2-3 episodes of The Crown, then half of The Witcher’s first (and only) season. That series makes no sense whatsoever, but it is great! Definitely doing a proper review of it once we’ve watched all the episodes – which is very likely to be tomorrow.
