You are probably bored of us being rednecks in the garden in the countryside, so I thought it was time to share something different. Time to talk about one of my favorite topics: food! I thought I’d share a few recipes over the next couple of days. Maybe you will find something you can try and make at home to brighten up your day. So, today’s recipe: bruschetta. Also, credit where credit’s due, this one is Ailsing’s creation.
Ingredients:
Bread
Half an onion
One clove of garlic
Three tomatoes
Fresh/dried herbs (basil, parsley)
Salt, pepper, olive oil, balsamic vinegar
Pop the bread in the oven to toast it, but you could also toast it in the toaster – in that case, wait until the topping is done. Finely chop the onion, garlic and tomatoes, mix in some fresh herbs if you have some, and dried if not – basil, parsley or oregano are great. Add some salt, pepper, olive oil, a little balsamic, mix well and pop on your bread. There we go, your lovely quarantine dinner is ready!
Cutting Bamboo & It’s Getting Cold
Just to continue with the daily updates about what we are doing: more of what we’ve done before! It is starting to get properly cold, so no more shirtless chainsaw photos for a while probably… But there was a forest’s worth of bamboo that needed to be cut back to the hedge-shape that it should be in, so that was my project for the afternoon.
Aisling continued her back-breaking rock garden project, plus dissertation work and readings. Some things don’t change… I edited some more photos, split some logs, made a big fire and decided to call it a day. Date night watching The Crown, cuddled up in bed, that’s what I call a good end to a day.
